I am obsessed with Brussel sprouts. They are so so delicious and easy to flavor. This salad is literally everything you need to up the ante on any midweek meals. There is this lively crunch from the shaved Brussel sprouts, salt, smoke and heat from the peppery bacon, earthy nuttiness from walnuts, tartness from dried cranberries, sweetness, and tang from the apples and a simple drizzle of pure maple syrup, dijon mustard, chili flakes, and lemon juice brings everything together beautifully. Throw in some salt and pepper for seasoning and you have yourself the star of all salads.

  1. Prep work: Peel the outer layers of Brussel Sprouts (if required) and chop or shave Brussel sprouts. Core and slice apples.
  2. Cook the bacon over the stovetop or in the oven at 400 F for 6-8 minutes. Chop or crumble roughly when cool enough to handle
  3. Make the dressing with dijon, maple, lemon, chili flakes, salt, and pepper
  4. Prepare the salad with shaved Brussel sprouts, sliced apples, crumbled bacon, cranberries, and walnuts. Toss, dress and enjoy
