  1. Prepare the pork belly by cutting it into 3-4" slices. Rub all sides, and especially the fatty side with salt, pepper, crushed ginger, garlic powder, and smoked paprika
  2. Place chicken broth in the Instant Pot and place the pork belly in it, fatty side up. Set the Instant Pot to Manual/ Pressure Cook mode for 80 minutes, close lid and set the vent to sealing position.
  3. 10 minutes before the time is up, preheat the oven to 400 F. Place butter on a heavy cast iron pan and place it inside the oven to get nice and hot
  4. When the timer is up, remove the cast iron pan from the oven (using mitts) and transfer the pork belly (fatty side down, using a strong pair of tongs) to the pan. Pork belly may be tender, but the skin will crisp in the oven
  5. Place the cast iron pan in the preheated oven for 20 minutes. While the pork belly is in the oven, drain the broth and cooking liquid from the Instant Pot and keep aside
  6. Turn Instant Pot into Saute mode, add sesame oil, sesame seeds and chopped shallots
  7. Once the shallots turn golden, add Worcestershire sauce, soy sauce, and maple syrup. Add the cooking liquid and broth back into this mixture and reduce till the sauce thickens (feel free to add corn starch if you have a lot of broth leftover)
  8. Remove pork belly from the oven after the 20 minutes are up and pour the prepared sauce prior to serving
