  1. In a medium bowl, mix together all the ingredients required for the jark spice blend. Toss and coat the cauliflower florets
  2. Heat the oven to 400 F and bake the cauliflower for 20 minutes, until fork-tender and golden brown
Lime crema
  1. Zest and juice 2 limes. Mix together sour cream, lime zest, lime juice, garlic powder, and salt
Mango pineapple salsa
  1. Toss together chopped mangoes, pineapples, bell pepper, salt, lime, and cilantro
Assembly
  1. Warm tortillas in a toaster oven or wrapped in foil over a heated pan. Stuff with cauliflowers, lime crema, and salsa. Garnish with cilantro or chopped onions
