  1. Preheat the oven to 450 F. Line a baking tray with aluminum foil or parchment paper and set aside
  2. Wash and peel the outer layer of the Brussel sprouts (if needed). Cut in half lengthwise, discard the tough ends
  3. In a large bowl, whisk together balsamic vinegar, olive oil, salt, and pepper. Add chopped Brussel sprouts to the bowl and coat well
  4. Place the Brussel sprouts face down on the prepared sheet. If using bacon, arrange the slices of raw bacon on top of the Brussel sprouts.
  5. Cook for 20-22 minutes until the Brussel sprouts are golden and the bacon is sizzling. Add parmesan, if using, while hot from the oven. Drizzle with extra balsamic, if required
