- 1 lb Brussel sprouts
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar reduced
- salt to taste
- black pepper to taste
- 3 slices bacon optional
- 1/3 cup grated parmesan optional

Instructions
- Preheat the oven to 450 F. Line a baking tray with aluminum foil or parchment paper and set aside
- Wash and peel the outer layer of the Brussel sprouts (if needed). Cut in half lengthwise, discard the tough ends
- In a large bowl, whisk together balsamic vinegar, olive oil, salt, and pepper. Add chopped Brussel sprouts to the bowl and coat well
- Place the Brussel sprouts face down on the prepared sheet. If using bacon, arrange the slices of raw bacon on top of the Brussel sprouts.
- Cook for 20-22 minutes until the Brussel sprouts are golden and the bacon is sizzling. Add parmesan, if using, while hot from the oven. Drizzle with extra balsamic, if required
