Sour Cream Banana Bread

Instructions
  1. Preheat oven to 350 F. Grease, line and dust 2 loaf pans and set aside
  2. In a large bowl, whisk butter until fluffy. Add sugar and whisk until pale and fluffy (about 2 minutes on medium speed)
  3. Add eggs two at a time and whisk again until the mixture is aerated and soft
  4. In a separate bowl, mix together flour, baking soda, baking powder, and salt
  5. Add the dry mixture to the wet mixture slowly using a spatula until a rough, sticky mixture forms. Do not overmix
  6. Add vanilla essence, sour cream and mix with a spatula. Add bananas and chocolate chips and mix until just combined
  7. Pour into prepared loaf pans until 3/4th full
  8. Bake at 350 F for 55-60 minutes, check at the 50-minute mark with an inserted toothpick and bake until the toothpick comes out clean but slightly moist
