Bright, fresh, crisp and full of surprising flavors - this citrus salad packs a solid punch with citrus fruits, crisp cold radish, fresh mint, sauteed kale, pomegranates, toasted pumpkin seeds, shaved asiago, and a simple chili-honey-lemon dressing.
Heat 1 tbsp olive oil in a small pan, throw in kale leaves and saute till leaves wilt a little. Add salt and set aside
Peel and slice orange and grapefruit. Thinly slice radishes. Separate mint leaves from steps and chiffonade. Add everything to a bowl with sauteed kale, toasted pumpkin seeds, asiago cheese shavings. I had some black cheese at hand, so I also threw that in - you can get creative here with anything you have at hand
To make the dressing, mix together honey, chili flakes, lemon juice, salt and pepper. Drizzle over salad and enjoy
