Winter Citrus & Greens Salad
Bright, fresh, crisp and full of surprising flavors - this citrus salad packs a solid punch with citrus fruits, crisp cold radish, fresh mint, sauteed kale, pomegranates, toasted pumpkin seeds, shaved asiago, and a simple chili-honey-lemon dressing.

  1. Heat 1 tbsp olive oil in a small pan, throw in kale leaves and saute till leaves wilt a little. Add salt and set aside
  2. Peel and slice orange and grapefruit. Thinly slice radishes. Separate mint leaves from steps and chiffonade. Add everything to a bowl with sauteed kale, toasted pumpkin seeds, asiago cheese shavings. I had some black cheese at hand, so I also threw that in - you can get creative here with anything you have at hand
  3. To make the dressing, mix together honey, chili flakes, lemon juice, salt and pepper. Drizzle over salad and enjoy
